Fresh Tomato Sauce w/ Herbs & Olives
In a large sauté pan, heat the oil and garlic over medium-low to medium heat, stirring, until the garlic infuses the oil but doesn't brown, 3-5 min. Discard the garlic. Sprinkle in the herbs & olives and keep the heat to medium. Stir to combine and sauté for about 1 min. Add the tomatoes, salt and pepper. Simmer vigorously, stirring occasionally, until the sauce thickens, about 15-20 min.
- 3 TB olive oil
- 3 large cloves of garlic, peeled & smashed
- 3 TB chopped mixed fresh herbs (equal parts of oregano, rosemary, & thyme)
- 1 cup coarsely chopped Kalamata olives
- 1 1/2 lb. halved cherry tomatoes
- 1/2 tsp. salt
Serve over pasta, fish or tuna, or hot boiled potatoes.
