Red Pepper Conserve
- 12 large sweet red peppers - chopped
- 3 cups granulated sugar
- 2 cups cider vinegar
- Salt to taste
Suggested uses: serve over cream cheese on crackers as an hors d'hoeuvres or appetizer. Very nice served at the holidays because of its bright red color.
- Simmer all ingredients until thick, stirring frequently - could be 1 1/2 hours.
- Process in hot water bath for 15 minutes.
