Red Pepper Conserve

Ingredients
  • 12 large sweet red peppers - chopped
  • 3 cups granulated sugar
  • 2 cups cider vinegar
  • Salt to taste
Method
  1. Simmer all ingredients until thick, stirring frequently - could be 1 1/2 hours.
  2. Process in hot water bath for 15 minutes.
Suggested uses: serve over cream cheese on crackers as an hors d'hoeuvres or appetizer. Very nice served at the holidays because of its bright red color.
