Steve's Mashed Carrots and Onions

Ingredients
  • 3 Pounds large, washed carrots, cut into chunks
  • 1 Medium onion, cut in thick slices
  • 1 Medium onion (a second one!), diced
Method

Boil Carrots and sliced onions until tender

Add diced onion to carrots and cook for another few minutes

Drain, mash with a potato masher, and season with butter, salt, and pepper to taste
